This recipe is a play on Cappuccino. I don’t think it is appropriate to have this first thing in the morning, but it is definitely an elegant and luxurious starter. I have had this recipe in back pocket since I was at Mr. and Mrs. Kirsch’s for dinner last summer. I finally made it. You could use any green pea soup recipe as the base of the cappuccino. The foam is made of onion and milk while the shrimp adds additional umami flavor to the soup.
