You deserve this cake. When I make this on a Friday, there is none left by Tuesday and I’mnotashamedofthat. I’ve adapted this recipe from many out there and tweaked it to lemony perfection.
Fresh lemon juice, lemon zest, and good quality cake flour make this sweet-citric cake light on the tongue and a perfect wake-up, mid-morning, early-afternoon, coffee-break, and after dinner snack.
Remember not to over beat after you’ve added the flour. Non stick spray followed by a dusting of flour in your bundt pan will make for an easy flip. Fill your bundt pan 2/3, if you have leftover batter make cupcakes! Zest away!
